Eggless Chocolate cake with Butter cream Icing

Ingredients

Sweetened Condensed milk-Milkmaid – 400 grams(1 can)
Butter – 125 grams
Maida/Flour – 225 grams
Cocoa powder – 3-4 tablespoons
Baking powder – 1 teaspoon
Baking soda – 1 teaspoon
Aerated cola – 200ml(I used Coke)




















 Grease and dust an 8’ round baking tin
Preheat oven to 150C.

Melt butter-Microwave for 1 minute on high.Let it cool.
Add milkmaid and beat well.

Sift together maida,cocoa powder,baking powder and baking soda.
Add maida mix to the milkmaid-butter mixture alternating with cola till maida and cola are finished.
Pour into the greased baking tin and bake for 30-40 minutes or do the toothpick test....i.e : insert a toothpick and make sure it comes out clean.

For Icing:

100gm butter
200-300gm icing sugar
2 tablespoon milk

with the help of a hand blender beat butter (at room temperature) wid icing sugar...add milk accordingly....beat till it forms soft peaks...
i added 1 tablespoon cocoa powder for the chocolaty look !



 

For assembling the cake


Cut the cake into 3-4 layers horizontally [I cut it into 3 layers]
Keep one layer of the cake on the serving plate.
Now spread 2-3 tablespoons of icing on top of the cake.
Repeat with other layers.
Decorate the top with chocolate shavings & dairymilk shots.

Eggless Black Forest cake




Ingredients

Ingredients – (For the Sugar syrup)

Sugar – ½ cup
Water – ½ cup

In a thick bottom pan,mix the sugar and water and boil till the sugar melts.Keep aside to cool.

Ingredients – (For the cream)


Fresh cream – 300 ml
Powdered sugar – 4-5 tablespoons
Vanilla essence – 1 teaspoon

Keep cream and the beater blades in the freezer for about half an hour.
Add sugar and essence to the chilled cream.
Beat well till the cream is thick and forms soft peaks.
Keep refrigerated till use.


Ingredients (for filling and garnishing)

A cup of cherries chopped fine-I used glazed cherries-reserve a few for garnishing on top.
A bar of milk chocolate – Make chocolate shavings out of the bar and keep refrigerated till use.


For assembling the cake

Cut the cake into 3-4 layers horizontally [I cut it into 3 layers].
Keep one layer of the cake on the serving plate.
Sprinkle 3-4 tablespoons of sugar syrup on it.
Now spread 2-3 tablespoons of whipped cream on top of the cake.
Add the chopped cherries on top.
Repeat with other layers.
Cover the cake completely with whipped cream on all sides and the top.
Level the top and sides with a broad spatula dipped in chilled water.
Decorate the top with chocolate shavings & halved cherries.

Nuttilicious


Ingredients :

5 tbsp milk powder
12 tbsp icing sugar
5 tbsp drinking chocolate
1/2 tsp cocoa powder
4 tsp ghee (melted)
6-8 drops of lemon juice
6 tbsp roasted peanuts

Sieve all the dry ingredients in a pan. Add lemon juice and melted ghee . Mix well.
Put the pan over another pan containing boiling water for a smooth mixing. Beat the ingredients in the first pan well...Add a few drops of cold water and again beat wel...add a few drops of water again.."IF" required...till a coating consistency is obtained . Mix the peanuts and spread this paste on a greased plate.....once it cools ... cut in desired shape ! :)

Coriander chutney


A refreshing Indian condiment that goes well with almost everything ...fritters/pakodi ,samaosas ,chaat n the list goes on !

Ingredients:

1 bunch of coriander, remove the large stems
1/2 tsp cumin seeds
1/4 tsp tsp asafetida/heeng
4-5 spicy green chilies
3 tbsp lemon juice
salt to taste

Put everything in a mixer grider to form a paste. Add some water if the chutney is too thick.

Stored in an airtight container in the fridge your green chutney should last at least a week.

Eggless Sponge cake


Ingredients :

2 cups All purpose flour (maida)
3 tsp Nestle milk powder
1 tsp Baking powder
1/4 tsp baking soda
3 spoons Ghee
3 spoons Cream
1 Cup sugar
1 Cup milk
3 drops of vanilla essence
2 drops of lemon juice

Method :

* Sieve the flour,milk powder, baking powder and baking soda together.
(repeat the process 3 times so that the ingredients are mixed thoroughly)
* In a separate bowl heat milk and sugar (DO NOT boil) keep stirring till the sugar dissolves completely !
* Mix Ghee with cream
* Now add the ghee+cream paste to the sieved flour and mixx well.
* "Gradually"(NOT at one go) add sweetened milk to the above mixture and keep stirring.
* Add 3 drops of vanilla essence and 2 drops of lemon juice
* Pour the mixture into a greased and dusted** tin.

**Dusted means ~ after greasing the tin just sprinkle little bit of maida on all corners/base of the tin..it prevents cake from sticking.

Preheat the oven to 200 degree C
Bake in a hot oven at 200 degree c for 10 minutes. Then reduce the tempreture to 150 degree C and bake for a further 10 minutes.
The cake is ready when it leaves the sides of the tin and is springy to touch.
When ready, take out from the oven and leave for 1 minute.
Invert the tin over a flat surface.
Let it cool...then tap to remove the cake from the tin !

Decorate with sprinklers or icing !

Handy tip:
If incase u dont have an oven/microwave u can put the tin as it is in a pressure cooker (without the whistle)
With a stand below to avoid direct contact with the surface of the cooker.
And let it cook for 50 mins and the cake will be ready ! :)

Fruitella Pudding










One of the MOST amazing looking dessert ! i have made it soo many times that i can now even make it with my eyes closed !
ohk now thats a sheer exaggeration ;)

Ingredients :

1 sponge cake
vanilla Custard
Fruits
Ice cream

Method :

To make thick custard :

* Boil 1 lt milk with 6 teaspoons of sugar (or as per taste)
* keep 5-6 spoons of milk aside and mix atleast 4 heaped teaspoons of vanilla custard (preferably brown & polson's)
* Remove the milk from heat and add the above paste and boil again for 2 minutes,stirring it continuously to avoide burning !
* let it cool then refridgerate it .

Preparing the Pudding:

* Take a deep & wide glass bowl.
* Cut the cake horizontally in 3 separate layers.
* Place one layer at the bottom of the bowl.Pour a little
custard...enough to cover the layer of cake ! Then again put a layer
of cake and repeat the process until you reach the rim of the bowl
* Give a final layering of vanilla ice cream.
* Decorate with as many seasonal fruits as possible !
And in a way which would make your dish as desirable as possible :)

n Voila your mouth watering pudding is ready to be served and win hearts ;)
